Veggie Pasta Bake.



Pasta is yum without taking the extra time to bake it but when you do it's like adding an extra layer of yumminess. Maybe that's the cheese...? Either way...pasta that's baked is worth the extra time!


 

RECIPE


Ingredients

- 1 red onion

- 4-6 garlic cloves

- 1 red capsicum

- 1 bunch of broccolini

- 1 bunch of asparagus

- 700g jar passata

- 2 tbsp mixed herbs (use a little less if you prefer)

- salt & pepper

- 2 tins of beans (I used butter beans)

- 250g pasta of choice

- a couple of big handfuls of spinach

- 1/2 cup grated tasty or cheddar cheese + extra for topping

- 1/2 cup parmesan cheese + extra for topping


Method

- preheat your oven to 200C

- finely dice the onion & garlic & sauté in a little olive oil until translucent

- chop the capsicum, broccolini & asparagus into smallish pieces

- stir the veggies, passata, herbs, salt & pepper in with the onion & garlic

- simmer on a medium heat

- meanwhile cook the pasta as per instructions

- once the pasta is cooked drain it & mix into the tomato mix with the beans, spinach & cheese

- pour into an oven dish & top with the extra cheese

- bake for around 30 minutes or until browned

- serve & eat!
