Mexican Bowls.

These beans are really easy to make with only a handful of ingredients. I prefer all black beans but can use whatever you have. Here I used 1 tin of black beans & 1 tin of borlotti beans because that’s what I had!


Then you also need rice, capsicum, cucumber & a quick slaw. Easy, quick & absolutely delicious!

Ingredients


Beans

- 1 red onion

- 2-3 garlic cloves

- 2 tins of beans

- 1/2 tsp cumin

- 1 tsp coriander powder

- 1 tsp garlic powder

- 1 tsp smoked paprika

- 2 tbsp tomato paste

- 1/2 cup water

- salt & pepper


Also

- 1 cup brown basmati rice

- 1 Lebanese cucumber

- 1/2 red capsicum

- 1 cup pre made slaw

- 1/2 lemon

- 1 tbsp mayonnaise


Method

- Add the rice & 2 cups of boiling water to a pot with a lid then put on a really low heat to cook. It’ll take around 15 mins

- While the rice is cooking, Finely chop the onion & garlic then sauté in a pot with a splash of water or a little extra virgin olive oil until softened

- Mix in the spices & cook for another min or so then add the tomato paste, water, salt & pepper

- Mix well & leave to simmer for around 10 mins. Add a little more water as needed but it should mostly evaporate out

- Cube the cucumber & capsicum

- Mix the lemon juice & mayo together then mix into the slaw

- Once everything is cooked, assemble into bowls, serve & enjoy!


Ps- I added pepitas for extra colour & crunch. Fresh coriander & avocado would be delicious additions to these bowls too!
