This is the easiest cake to make everrrr!!
I iced this cake but it’s delicious on its own as well!
This is egg free, dairy free, nut free, gluten free, vegan & it’s so delicious! Plus it takes minutes to put it together! So what are you waiting for?!?!
RECIPE
Ingredients
- 1 1/2 cups buckwheat flour
- 2/3 cup coconut sugar
- 1/2 cup cacao powder
- 2 tbsp flax meal
- 3 tsp baking powder
- 2 tsp cinnamon
- 1 1/3 cups milk of choice
- 1/4 cup extra virgin olive oil
- 1 tbsp apple cider vinegar
- 1 cup frozen blueberries
Then...
- preheat your oven to 175C
- mix the dry ingredients
- mix the wet ingredients (except the blueberries)
- mix them together
- fold through the blueberries
- pour into a lined cake tin
- bake for 30-40 mins or until a skewer comes out clean
- transfer to a cooling wire.
- If you're icing your cake, allow it to cool completely before icing. I used a regular icing mix with added cacao but you could also find a chocolate avocado frosting recipe using google or dust with icing sugar
