We used to buy quesadillas as a healthier choice of take-away but we all much prefer these homemade ones (even my kids!)! Luckily these are as quick to make as they are to order!
RECIPE
- 420g tin black beans
- 300g tin corn
- A handful of fresh coriander
- 1 tsp garlic powder
- 1 tsp smoked paprika
- Salt & pepper
- The juice of 1/2 lime
- Wholegrain tortillas 6-8
- Cheese of choice (Regular, lactose free, vegan)
METHOD
- Mix the beans, corn, coriander, spices, salt, pepper & lime together. Taste & adjust as needed
- Heat a pan to a low-medium heat
- Fold 2 tortillas in half & place them in a pan with the straight sides together which makes a circle shape
- Lift the top of one tortilla, add a little cheese, spoon on the mix, add a little more cheese & press down
- Repeat with the other tortilla
- Once the cheese has melted & the bottom turns golden, gently flip to cook the other side with a spatula
- Adjust the temp as needed & repeat with the remaining tortillas
- Service with guac, salsa or enjoy as is!
