Apple crumble is a favourite of many! It's so comforting but also so yum! It's not quite the season for apple crumble as it's beginning to warm up here in Melbourne but I hadn't made muffins in such a long time and I felt like making something different... So Apple Crumble Muffins!
Whilst they do take a little more prep time than usual muffins, they're still really easy to make. If you've followed my instagram and recipes for a while then I'm sure you'd expect that. I don't have the patience, the time or the energy to be fussing around in the kitchen for hours!
If you use gluten free oats these are gluten free, dairy free, egg free and completely plant based!
RECIPE
Ingredients
Muffins...
- 1 cup buckwheat flour (or other plain flours such as wholegrain, spelt, rye)
- 1/2 cup oats
- 1/3 cup coconut sugar
- 2 tbsp flax meal
- 2 tsp baking powder
- 2 tsp cinnamon
- 3/4 cup milk of choice (I used oat)
- 1/4 cup extra virgin olive oil
- 1 tbsp apple cider vinegar
- 1 grated apple
Apple
- 2 apples chopped into cubes
- 1 tsp coconut sugar
Crumble
- 1/2 cup oats
- 1 tbsp coconut sugar
- 1/2 tsp cinnamon
- 2 tbsp coconut oil
Method
- Preheat your oven to 180C
- Toss the cubed apples in a little extra virgin olive oil & coconut sugar then bake for around 10 minutes or until they're just soft
- Add the dry crumble ingredients to a bowl & mix then add in the coconut oil & pinch together with the tips of your fingers until it's all combined. Keep some in chunks or leave loose - whatever you prefer
- Add the dry muffin ingredients to a mixing bowl, mix in the wet ingredients then fold through the grated apple
- To assemble, spoon the muffin batter equally into a greased or lined muffin tray, spoon some cooked apple on top then spoon the crumble on top of that
- Bake for around 18 minutes or until cooked through
- Enjoy!
